Loved it ever since I first starting watching the series...but Naruto came and I've stopped and then started again.
Chapter 60 and counting....won't stop until I finish the whole thing this weekend.

By the way, episodes 3 and 4 of Lost Canvas have been subbed. :D I've seen 3 and it was just as awesome as the previous ones.

Let's see, series I've really enjoyed:
Mushishi: Beautiful animation and poignant stories told in each episode. I'm even tempted to call it a must see. :x
Aria: I don't know if slice of life series are your thing, but for me this is the kind of series that never failed to make relax and just... feel happy. "Appreciate the little things" kind of message.
Gankutsuou: I keep thinking you might have seen this one... If not, I hope you do. ;)
Haibane Renmei: Another slice of life, but this one is more mysterious and mystic since the characters seem to be in some kind of purgatory. Pretty powerful, without being depressing.
Simoun: This one is hard to describe and if you do end up watching it, don't be fooled by the first episode (the weakest, in my opinion). It's about a group of girls who pilot very unique ships during a time of war, in a very traditional/strict culture. The strangeness comes from the fact that every person is born female in that country and, at one point in their lives, they have to define themselves as either male or female. You can imagine that includes an f/f factor, but the story is so epic and the dynamic between the characters so interesting, that I really wish more people would know about Simoun.
To Terra: Adaptation of a classic manga by the same author of Kaze to ki no uta. It has space battles, old school character designs and a story that develops slowly, but quickly turns intense and dramatic. Basically, everything that I like from older series but with updated visuals.
Baccano: This series is so much fun! For one, it's set during the 1930s (I don't remember seeing many series set in that time) and, more interesting, the story isn't told chronologically. So yes, at first it's difficult to put all the pieces together, but it's amazing how by the end of it, everything fits perfectly together.
Ghost in the Shell series: This one might be too long since it's two series of 26 episodes and one movie, but in case you ever feel like watching a really good sci fi series, I really recommend this one. Great animation, great music, great stories. So many times yelled "no way!" at the screen. ;)
And a few movies/OVAs before this gets way longer:
Toki wo Kakeru Shoujo: A girl discovers she can travel through time and complications ensue. I might be making it sound simpler than it is, but basically it's very fun and charming, especially thanks to the animation, that feels really natural and fluid.
Millennium Actress: Or any movie of director Satoshi Kon, to be honest. They're all good, but this one was so beautiful and touching.
Arashi no Yoru ni: In case you want to see something really, really cute. The plot is not very original (the wolf and the sheep become friends, basically) but it's just so... cute and sweet.
Ok enough or I'll never stop writing. >_< The saddest thing is that I feel I've barely started looking at the list of series I've rated highly. I'm just so easily pleased. I hope at least one of them gets you hooked! And if not, there's still more to choose from. *sigh*
